Vegan Ribs & Mojo Verde (Quick & Easy Plant-Based Tapas)

WITH ZESTY MOJO VERDE SAUCE

Yes, Baby Ribs bring the mutherfkn house down with unmatched succulence and fall-off-the-bone tenderness. BUT. The real MVP here is the Mojo Verde Sauce.

A bright green, garlicky, herby sauce from the Canary Islands, Mojo Verde looks like pesto and chimichurri had a child… who grew up feral and now owns a food truck. It’s made with cilantro, garlic, vinegar, olive oil, and sometimes cumin, which is one of those spices where, if you use the right amount, it’s incredible… but if you use too much, you’re like, “Why does this taste like regret and old spice rack dust?”

Mojo Verde is bright, zippy, slightly aggressive—but in a fun way. You blend it up, and suddenly everything in your fridge becomes a vessel. Potatoes?Drench ’em. Vegan ribs? Smother them. Your finger? Sure. It’s a chip now.

  • Kitchen scale

  • A mixing bowl for marinating the ribs

  • Blender of food processor for making Mojo Verde

  • A large non-stick pan or grill for cooking vegan ribs

How To Prepare Vegan Ribs with Mojo Verde

1. Marinate the Vegan Ribs

Slice each defrosted rack of Juicy Marbles Baby Ribs into individual ribs (ensuring each piece has its “bone”).

In a bowl, combine garlic powder, onion powder, sweet smoked paprika, black pepper, and 2 tbsp olive oil.

Toss the ribs in the marinade and let them sit for at least 15 minutes to soak up the flavor.

2. Make Mojo Verde

While the vegan ribs are marinating, make Mojo Verde. In a food processor or blender, combine cilantro, garlic cloves, olive oil, red wine vinegar, salt, cracked black pepper, and ground cumin. Blend until smooth or leave slightly chunky, depending on your preference.

3. Cook the Vegan Ribs

Heat olive oil in a large non-stick pan over medium heat. Add marinated vegan ribs and cook for 8–10 minutes, turning until browned on all sides.

Grill option: Cook over medium-high heat until charred and heated through.

4. Serve

Plate the vegan ribs and generously drizzle them with Mojo Verde.
