Cooking is 90% of my identity (the other 10% is cute animals — since I’m already oversharing). But even I, the master of kitchen madness, sometimes can’t summon the will to feed myself — especially when summer hits and the world turns into a 24/7 steam room. While I’d love to survive on watermelon alone for three months, my body unfortunately demands more. Or... have I just been brainwashed by the mass media into thinking I need to eat my body weight in protein? Something to unpack in therapy, probably. Either way, that’s when these crunchy, refreshing, meaty salad cups enter the stage. All they ask of me (and now, you) is a bit of chopping, some noodle boiling, and a quick pan toss.  Almost manageable, even when the world’s on fire.

How To Prepare Salad Cups 


1. Whip up the Saucy Sauce

 

Combine all sauce ingredients in a bowl. Whisk together until sugar is dissolved. 

2. Prepare All Components 


Clean the salad leaves, chop vegetables and fruit, and destem the herbs. Place them neatly on your favorite plate or tray. 


3. Cook Meaty Meat 



Remove defrosted Meaty Meat Pork-ish from its packaging and season it with salt and pepper.

Heat neutral oil in a pan over medium heat. Add Meaty Meat and cook for 7-9 minutes, turning in between to ensure even browning on all sides. Remove from heat and slice with a sharp knife. Serve immediately for the best results.

Of course, just swap soy sauce for tamari.

Thinly sliced carrots, shredded red cabbage, radishes, pineapple, avocado, or mung bean sprouts all work well in this recipe. 


What type of noodle should I use? 


Vermicelli noodles are a great base, but wheat, soba, or sweet potato noodles all work well in this recipe. You can also swap noodles for steamed rice.


Can I prepare this ahead of time?

You can prepare the sauce, cook noodles, and chop vegetables ahead of time. Store all in separate airtight containers in the fridge until ready to use. Cook Meaty Meat Pork-sih right before you are ready to eat for the best texture and freshness. 


What is the best lettuce for salad cups?


Baby gem, romaine hearts, or iceberg lettuce work best because they’re sturdy and have a nice crunch.
