Vegan Pulled Pork Sliders

This recipe is inspired by a veggie burger I used to eat as a young child at E.J’s Luncheonette on the upper east side in NYC. I wasn’t even vegetarian, but my mom was and would order their veggie burger which had guacamole and alfalfa sprouts on it. Soon instead of ordering a regular burger, I would always order this, and still remember it as one of my favorite veggie burgers. Though when adding pulled juicy marbles in bbq sauce as your burger meat it is no doubt an INSANE upgrade.
Ingredients
- 1/4 cup of your favorite bbq sauce

A handful of alfalfa sprouts (~ ½ cup)

A handful of salad greens (~ ½ cup)

1 tbsp mayonaise
- 1 tomato, cut into medium-thick slices

1 tbsp mustard of choice
-
Your favorite burger buns (1 large or 2 small buns)

Guacamole, homemade or store-bought (quantity is up to you! I like mine loaded up!)

½ Meaty Meaty Pork-ish, pulled into pieces

1 tbsp neutral oil (sunflower, vegetable, or canola)

Salt to taste
Directions
Heat a nonstick pan and add a little oil. When the oil is hot add the juicy marbles to the pan and toss. Sear the meat until it’s crispy on each side. Then turn the heat off. Pour your bbq sauce over the meat and mix it until it’s evenly coated with sauce.
While the steak is cooking, toast your buns. You can either put them in the oven or toast them on the stovetop.
Assembling the Sliders
Take your bottom buns and add a layer of mayo. Take your top buns and add a layer of mustard. Then add the lettuce, tomato, guac, bbq steak, and alfalfa greens to the bottom bun and close it with the top bun. Enjoy with a side of sweet potato fries and a pickle!
