How To Prepare Vegan Pinchos with Zesty Green Sauce

 

1. Marinate the Vegan Meat

In a bowl combine all marinade ingredients (spices, herbs, lemon juice and olive oil). 

Cut Juicy Marbles Thick-Cut Filets into chunks and toss in the marinade. Let sit for at least 20 minutes, while you prepare the plant-based zesty green sauce. 


2. Make the Plant-Based Zesty Green Sauce 

In a food processor or blender, pulse together all the Zesty Green Sauce ingredients (parsley, garlic, chili, olive oil, lemon juice and lemon zest, olive oil and salt). Blend just until chunky. Store in an airtight container in the fridge. 

3. Start Cooking the Vegan Pinchos 

Heat olive oil in a non-stick pan. Cook marinated vegan meat chunks for 7–8 minutes, turning until browned on all sides.

Can I use a different vegan protein?


Of course, swap the Juicy Marbles Thick-Cut Filet with any other Juicy Marbles Whole-Cut product, tofu, tempeh or seitan. 


Can I use dried herbs instead of fresh parsley?


Not for the salsa. Fresh parsley gives the salsa its vibrant color, flavor and body. Dried herbs won’t blend well or provide the same freshness.


Can I use a grill instead of a pan?


Yes! A grill will add a delicious char to the vegan pinchos. Just be sure to oil the grates and watch closely to avoid burning.
