Store-bought ingredients will do just fine. But if you really want to honor our mythical tiny grandma, arm yourself with vegetables from the local market and some fresh bread from the neighborhood bakery. Then, carve out 20 minutes to chop, marinate, and drizzle this tangy, savory, herbaceous wonder into existence…and promptly destroy it with your face.

How To Prepare Vegan Bahn Mi 


1. Prepare Quick-Pickled Vegetables 

 

Peel and thinly slice or chop vegetables into matchsticks. 

 

Combine rice vinegar, water, sugar and salt in a saucepan and bring the mixture to a boil. Pour hot pickling vinegar over vegetables and let them marinate while you prepare the rest. Once they cool down to room temperature, store them in an airtight container in the refrigerator until ready to use. 


2. Prepare Vegan Meat 

 

Preheat the oven to 400°F / 200°C.

 

Shred Meaty Meat Pork-ish using your hands or two forks. Make the sauce by mixing together BBQ sauce, lime juice, lime zest and sesame oil. Pour the sauce over shredded vegan pork and mix well to coat. You can let it marinate for a few minutes. 

 

Spread Meaty Meat into a single layer on a parchment lined baking tray and bake for 18-20 minutes, until browned and caramelised. For more even baking, stir the vegan meat a few times. 


3. Whip Up Spicy Mayo

 

Whisk together vegan mayonnaise, hot sauce, lime juice, lime zest, and salt. Store in an airtight container in the fridge until ready to use.


4. Assemble Your Sandwich

 

Prepare your desired sandwich toppings. We went for fresh coriander, baby cucumbers and red chili. 

 

Slice the bread lengthwise without cutting all the way through, keeping on end intact. Toast the bread lightly on a pan, in the panini press or under the broiler. 

 

Smear both sides of the bread with a thick, velvety layer of spicy mayo, leaving no corner untouched. Mindfully layer pulled Meaty Meat, tangy pickled vegetables, refreshing cucumber, aromatic coriander, and spicy chili. Can I make this sandwich gluten-free? 


Yes, swap soy sauce for tamari, use gluten-free bread and make sure to check your BBQ sauce is gluten-free certified.

Can I prepare pulled Meaty Meat in a pan instead of an oven?


Of course. Add shredded Meaty Meat into a non-stick pan with 1-2 tbsp neutral oil (vegetable, canola, sunflower). Cook for 8-10 minutes (depending on the size of your pan this process might take longer), until crispy. Add sauce and mix well to coat. 


Can I prepare this ahead of time?


You can prepare pickled vegetables and spicy mayo, marinate Meaty Meat Porkish, prepare herbs and chop cucumbers ahead of time. When you are ready to eat, just cook vegan meat in the oven and assemble the sandwich. 


Can I use different vegetables for quick pickled vegetables?


Carrots, daikon radish, french radish, cucumbers, cabbage, bean sprouts, chili pepper, garlic, shallots, red onion and ginger. Try different combinations and find your favorite. 


What kind of bread is best for Bahn Mi? 


Traditional Bahn Mi uses a lighty, airy Vietnamese-style baguette with a crispy crust. Use a light, soft French baguette, or a Hoagie roll.
