How To Prepare Plant-Based Lamb on Warm Creamy Bean Puree and Herby Marinated Tomatoes
1. Prepare Marinated Herby Tomatoes
Finely chop herbs of your choice and cut tomatoes into bite-sized pieces. Add both to a bowl with crushed garlic clove, and season with salt, pepper, vinegar, and olive oil.
Cover and place in the fridge to marinate until ready to plate. This can be done a few hours in advance.
2. Whip up the White Bean Puree
Add olive oil, a roughly chopped garlic clove, and a shallot to a non-stick pan or pot. Slowly heat up to medium heat, mixing constantly to prevent burning. This way, oil will slowly get infused with the aromatics. After 1-2 minutes, once garlic and shallots have some color, add beans and water.
Season with salt and pepper. Cook for 3-4 minutes, until warmed through. Transfer to a high-speed blender or food processor, and blend until smooth, then back to the pot, to keep it warm over low heat, while cooking Meaty Meat.
3. Cook up Vegan Meat
Remove Meaty Meat Lamb-ish from the packaging and season with salt and pepper on all sides. Heat olive oil in a non-stick pan over medium heat. Add Meaty Meat and cook for 8-9 minutes, until nicely browned on all sides.
Remove from the heat, and let it rest for a few minutes. Slice it up into desired pieces.
4. Serve
Spread bean puree on a plate.
Top with sliced Meaty Meat, and spoon over marinated tomatoes. If you’re feeling fancy, drizzle over extra olive oil and sprinkle with flaky salt.
