How To Prepare Loin with Creamy Mushroom Sauce
1. Prep and Bake the Loin
Preheat the oven, and remove the Loin from its packaging. Season it with salt and pepper on all sides.
Add olive oil, plant-based butter, and a few sprigs of thyme and rosemary to a saucepan and heat up until the butter melts, and set aside.

Place the seasoned Loin on a parchment-lined baking sheet, drizzle with oil-butter mixture, and place it in the oven.

Baste the Loin with oil-butter mixture every 5-7 minutes, and bake for 20-25 minutes, unitel nicely browned and caramelised.

2. Make the Sauce
Heat olive oil and plant-based butter in a pan over medium heat. Once hot, add shallots and fry for 2-3 minutes before adding minced garlic. Mixing constantly to prevent burning, add mushrooms and thyme after a minute.

Season the mushrooms with salt and pepper, and cook until they have released all moisture and started to brown, about 7 minutes. Deglaze the pan with whiskey and soy sauce, and cook for another minute.

Pour over cooking cream and vegetable stock, and simmer for 15 minutes.

Once the sauce is done cooking, remove the sprigs of thyme and sprinkle over finely chopped parsley and chives.

3. Finishing touches
Once the Whole-Cut Loin is finished baking, remove it from the oven, and let it rest for a few minutes before slicing into 0.4-0.8 inches / 1-2 cm-thick slices.
Spoon a bit of mushroom sauce onto a large serving plate. Neatly stack the Loin slices on top of the sauce. Ladle over more sauce, and sprinkle with thyme and pickled red onion.
